An easy bag lunch or snack recipe, with cheese bagels, grilled peppers, and Boursin cheese. It brings an adult taste (grilled peppers) to a simple kid favorite (bagels), and heats it up. This dish serves 4.
INGREDIENTS:
1 cup grilled whole peppers, deseeded
4 oz. Boursin cheese, crumbled
1 tsp. salt
1 tsp. black pepper
8 large plain bagels with poppy seeds
METHOD:
Preheat oven to 400 F (200 C). Season grilled peppers. Spread Boursin on one side of each opened bagel. Put on grilled peppers and top with other bagel halves. Wrap in foil and bake for 10 minutes until soft. Serve hot or cold with a light salad and a meaty soup.
